Back then it was called chicken broth. Or just chicken curry. Because that was the definitive chicken curry when I was growing up.

Everyone made it. Some have done better than others. But the backbone was always there. That wonderful Bengali five spices called Panch Phodan. garlic ginger potatoes Always potatoes. A hint of cinnamon. And chicken.

Sometimes green chilies. a little sugar or mustard oil. The mustard oil is a nice touch. I’ve made it optional here but a 50/50 mix of mustard oil and vegetable oil adds a nice touch.

Chicken broth is a queen curry. Almost soupy. Which is very different from restaurant style curries. If you only have restaurant-style curry, try running some time. Totally different experience. Like Lemon Coriander Chicken Curry. Delicious stuff.

This version is restaurant style. And that means rich, thick gravy. That’s what you get here. I should do a homestyle version though. So you can compare. Both are good.

I still haven’t come up with the recipe (attributed to my lazy nature). For a video project in recent months (actually just before Puja), I finally decided to cook Duck Bungalow Chicken Curry. At this point, I contacted Food Historian, Ms Pritha Sen.

I decided to quote a restaurateur and a food historian instead of writing the details myself 😊😊. And why especially when both of them have something fun to share about “Dakbangla Murgi”!

“When we were starting Bhojhori Manna in 2003, our team member Gautam Ghosh, the famous film personality narrated his experience of reaching Dakbangla in some remote rural areas which are considered evening in these areas and if asked what could be served. The caretaker of Dakbangla would offer to find a bird in the dark of night and make a curry out of it and serve it with steamed rice and a few green chillies. Absolutely mouthwatering stuff. Then we went in. Exciting discussion on the matter..and then Gautam added. …Let’s do it and add a whole chicken egg to it too. It will give value for money to the customers. This is how Bhojhori Mannay Chicken and Mutton Dakbangla has evolved. Today we see many experts writing about the origin, recipes and more. . For us it happened through an evening session of excitement over food. Also we find all kinds of restaurants and hotels that name any kind of curry as Dakbangla. !”

Dak Bungalow Chicken Curry aka Chicken Dak Bungalow is a simple chicken curry cooked by the caretakers of Dak Bangla. You must understand what is meant by Dak Bungalow. During the British period, the rest houses on the “Dak” route were called Dakbangla or Dakbungalow. This curry was never about elaborate cooking or exotic spices. Instead, it was cooked with basic spices available at remote points. They used to add potatoes, but eggs were included later. Kosha Mangsho (bengali Lamb Curry)

Let’s start with the definition of Dakbanglo. These are nothing but government owned rest houses located in remote areas. Dak means post. These houses were initially built to ease the process of the postal service and to accommodate officials traveling on business. Homes had basic rations and a few workers such as a doorman and khansama (cook) to meet food needs. They cooked with the limited resources readily available and sometimes without any forewarning of the arrival of guests.

Therefore, no marination; No fancy spices; Use locally available ingredients and come up with a healthy dish. This is how Dakbungalow chickens were born.

With the information in mind, I finished cooking Dakbungolo Chicken. I didn’t use onion paste; Instead, I used roughly chopped onions. I thought I used ginger and garlic paste along with some basic spices. Also, I used cumin, coriander and garam masala.

I wasn’t sure if curd was part of this curry then; However, I used it. Lastly, I used both potatoes and eggs with the chicken. Rest is nothing but slow cooking.

Chicken Cutlet, Bengali Style

For me, Dak Bungalow Chicken Curry aka Chicken Dak Bungalow is a Bengali style chicken curry cooked with basic spices along with eggs and potatoes.

Here I must mention, I don’t believe in pure “this” and pure “that” when it comes to food. Therefore, this recipe is not an authentic but a practical recipe matching the available details.

Caretake used to cook a simple chicken curry, “Dakbangla” is now a Bengali delicacy. Dak Bungalow Chicken Curry aka Chicken Dak Bungalow is a Bengali style chicken curry cooked with basic spices along with egg and potatoes.
